Way too good to be true.Deliciousness without guilt.Indulgence without a new wardrobe.Dessert without a food coma.Heaven in a bowl.As you may have guessed, I’m referring to Vegan Mango Ice Cream. The funny thing is that this ice cream is made only from fruit! No sugar, no milk, no additives. But it tastes identical to sorbet – with a fraction of the sugar. After making it, I offered the bowl to my mom. She looked at me questioningly and asked, “Don’t you want any?” I replied with, “Yes, but just a little” and went to get a spoon. When I turned back to her, she had disappeared into thin air… with the ice cream. I never saw that bowl of Vegan Mango Ice Cream again…

Instructions
  1. Place the 3/4 Cup mango chunks and 1/2 medium banana into a blender.
  2. Blend until smooth. You probably will have to pulse the blender so everything reaches the blade.
  3. Enjoy 🙂
