If you like cilantro, then you will love this recipe. Inspired by Cinco de Mayo, I decided to combine two amazing Mexican dips – Salsa and Guacamole. Welcome to the 2-in-1 Cilantro Salsa Guacamole.
The addition of so many tomatoes also lightens the recipe a little, making it less calorie dense. Bonus!
2 medium bowls
Dice 2 cups of grape tomatoes into small pieces. Lay out paper towels and place the chopped tomatoes on them. Allow the paper towels to soak up excess moisture. You may have to repeat this twice until most of the excess moisture is gone.
Place the diced tomatoes into a bowl and combine with the chopped cilantro. Stir together until the cilantro is evenly distributed among the tomatoes.
Squeeze 1/2 lime onto the cilantro-tomato mixture and stir.
Add 1/2 tablespoon chili powder, 1/2 tablespoon crushed red pepper, and 1/2 teaspoon salt. Stir until well-combined.
If possible, allow the cilantro-tomato mixture to sit in the refrigerator for an hour or two. This will allow the flavors to mix. If you don't have time for this, just move on to the next step.
In a separate bowl, scoop out the flesh of the avocados.
Add the juice of 1 small lemon.
Using the whisk, mash the avocados until they are creamy. You can leave chunks if you would like. If you prefer a more creamy texture, then continue mashing. It's up to you.
Add the cilantro-tomato mixture to the avocados. Stir (do not mash) to combine.
